Good Stuff Eatery Mayos

Amanda gets a lesson in spiced up mayos from chef Spike Mendelsohn.

After putting in some time working the line at Capitol Hill's Good Stuff Eatery (my burger-flipping skills could use some work), I convinced chef Spike Mendelsohn to let me steal the recipes to some of his burger joint's best mayos. These tasty recipes appear in the Steal This: Good Stuff Eatery video. They're excellent on fries or burgers at home.

All recipes adapted from chef Spike Mendelsohn's Good Stuff Cookbook.

Sriracha Mayonnaise
2 cups mayonnaise (check out Spike's homemade mayo recipe in his Good Stuff Cookbook)
1/2 cup Sriracha sauce
2 tbsp sweetened condensed milk

Combine all ingredients in a bowl. Sriracha mayo will keep refrigerated in an air-tight container for one week.

Old Bay Mayonnaise
2 cups mayonnaise
1/2 cup Old Bay seasoning
grated zest and juice from 1 lemon

Combine all ingredients in a bowl. Old Bay mayo will keep refrigerated in an air-tight container for one week.

Chipotle Mayonnaise
1 cup mayonnaise
1 chipotle pepper
lemon juice

Combine all ingredients in a bowl and muddle the pepper until well combined in the mayonnaise. Mayo will keep refrigerated in an air-tight container for one week.
